Japan is hallowed ground for food obsessives the world over. But there's one style of Japanese cooking that turns traditional cuisine into high art. Inspired by the changing of the seasons and the beauty of nature, Kaiseki is the country's unique version of haute cuisine. At Brushstroke, chef Isao Yamada uses an ever-changing array of seasonal ingredients to tell stories from life in Japan. From slices of sashimi to charcoal-roasted eel, Brushtroke's kaiseki menu features food as metaphor and allegory.

It's all very interesting but next time remember you can't read subtitles and pay attention to the way the food looks.

It seems to me Americans are beginning to decipher Japanese culture. As more fluidity between the people of our countries develops, and real culture becomes mainstream, we get a greater understanding of them.

Reminds me of that bar scene in billions

It's like someone saw a piece of art and was like: "I want to eat that."

This guy loves what he does. Awesome vid.

Making a video where you are expected to look at the food, then doing it in a foreign language with subtitles, makes it very hard to follow. I enjoy most of your videos....this one not so much

Who's writing all the music for the First We Feast Episodes?

If that's eel they showed when he was talking about eel, then eel looks really good!

Dang, that wisteria-laden sashimi platter on ice looks divine!

Pls change the font and spacing of those subtitles to something normal. You may think it looks nice but it actually makes the readability much worse

I went to Japan and had this. It was terrible. I really wanted to like it, but it was terrible.

The sushi is not like sushi you get At a sushi place, it often has the skin still attached, and is considerably more fishy tasting. I don't know if that is a stylistic choice, or just a pure reflection of the freshness of the fish.

And they do not appear to show you what else they put inside of Kaiseki dinners. A quick rundown would include but is not limited to, boiled snails still in their shells, lightly fried shell fish (still slimy), a variety of uncooked vegetables, tremendously fishy miso soup, thin, gray slices of boiled Waygu beef (boiling Waygu?! Seriously?!), raw eggs, white rice, and a whole slew of unidentifiable fish products.

And this was not supposed to be a shitty place either. It was at a Japanese Ryokan, in the country, rave reviews on their site and on yelp. Don't get me wrong, the kaiseki looked wonderful, but the textures and flavors of a traditional Kaiseki dinner appears to be anathema to a western pallet.

PS: I traditionally love Japanese food and culture. Tokyo had so many places to eat had such good food that it blew my mind all over the place. And I am a huge fan of Japanese culture, and I don't want to disparage the message behind this video. But if you are ever from the Westin going to Japan, beware. Kaiseki is an expensive way of starving yourself.
